When a Haitian family is fortunate enough to have meat for a meal you will find them eating beef, goat, or most often chicken.



Here’s a delicious Haitian Chicken Recipe for you to try…


Haitian Chicken

2 ½ lb. Chicken, cut up

¼ Cup Lime Juice

2 ½ Tsp. Dry Mustard

½ Tsp. Black Pepper

¼ Tsp. Paprika

1 Tbsp. Chili Powder

Pinch of Red Pepper

1 Lg. Garlic Clove

2 Tbsp. Olive Oil

1 Tsp. Salt

2 Tbsp. Basil

Arrange Chicken Skin Side Down in Shallow Baking Dish. Combine Remaining Ingredients in small bowl. Pour over chicken. Cover and refrigerate for 4 hours. Bake uncovered at 350 for 30 minutes.  Turn and bake 30 more minutes, basting. Broil until Brown. Sprinkle with bread crumbs.
